One of Charleston’s very own chefs is one of the exclusive 2010 Chow 13. McCrady’s Sean Brock is one of 13 chefs selected for pushing the culinary world in new, adventurous directions. He is also the 2010 James Beard Award recipient for the Southeast.
“This fall, Brock is opening a new restaurant called Husk that will serve only food produced in the South. The cooking will be rustic: a lot of it done in a wood-burning oven. But he’ll still be entertaining diners with dishes like cotton candy made out of emulsified country ham.”
Okay even as a vegetarian my interest is peacked about that cotton candy out of ham.
